These grapes come from an old forest vineyard in the heart of the Baix Penedés region, the soils here are known for low yields with a great concentration in the grapes. These vines are surrounded by a rich biodiversity which encourages a natural banace in the wines.
The grapes for this wine are destemmed and allowed 6 hours of skin contact prior to being pressed. The wine is the transferred to steel tanks where fermentation lasts around 20 days after which the wine stays on its lees for 6 months. During this time the wine undergoes a partial malolatic fermentation.
