Nadia and Christian farm 5.5 hectares across differed terroires. Most of their reds come from 3ha in Tavel on a mix of slate, clay, sand and calcareous soils.
For this wine all the varieties are co-fermented 100% whole cluster in steel tanks. Pressed 2-3 weeks after maceration then returned to tank to finish fermentation where the wine spends 3-4 years on its fine lees with 1-2 rackings only if necessary.
The wine is transferred to another tank prior to bottling where natural sedimentation occurs. It is then bottled by gravity.
